Food is one of the clearest records a place keeps of its own history. Trade routes, colonisation, migration, climate and religious practice all leave marks on what people cook, and these guides try to trace those marks rather than simply list ingredients. Where a dish's origins are genuinely disputed — as with pavlova, pizza Margherita or ceviche — we say so instead of picking a side.
